原形を保っているようですので、揚げ茄子・焼き茄子のそれよりも
寧ろお漬物のようなもふもふとした食感なのでしょうか？

やわらかく蒸した後、冷やしてから生姜醤油や
辛子醤油でいただきます。
この茄子は長岡の伝統野菜"巾着茄子"といって
身がかなりしっかりしてて、火を入れても身崩れ
しにくいものですね。
食感的には、果肉がツルッと種部分がトロッと、
そんな感じですｗ
